... stuff that came with the maps I loaded? If there isn't a way to eliminate them, does anyone know the right combination of settings to minimize their intrusion? Any other suggestions? Other than asking Garmin to hire an Apple engineer for a week to overhaul their software and UI.

As a follow-up, we did the GPS workshop today and I wanted to say thanks to both Tatanka49 and EastVillageFamily for their help. Tatanka was gracious enough to loan us a half dozen of his GPSr's for our use and several pages of educational materials, and EVF sent a great .kml file ...
